It’s recipe #2 in the Crock Pot Creations series. This time it’s Lemon Chicken Pitas.

This was the first time I attempted this meal in the Crock Pot (typically I grill the chicken).  But the slow cooker did not fail me, and it proved to be a delicious (and EASY) dinner.

Start by placing a package of chicken breasts (1 – 1 1/2 lbs) in a Ziploc bag. Add the zest and juice of one lemon, 1 tsp. garlic, 1 Tbsp. olive oil, salt and pepper. I let my chicken marinate for 24 hours. I wouldn’t recommend less than eight hours so you make sure all the lemon gets absorbed into the chicken.

When you’re ready to cook, throw the bag of chicken mixture into the Crock Pot along with about 1/2 cup of chicken broth. Water is okay too; just something to keep the chicken from drying out when it’s cooked. Cook on low for about 6 – 8 hours, until the chicken shreds like the photo below.

I serve the lemon chicken with Trader Joe’s tzatziki sauce piled onto a piece of warmed Trader Joe’s Middle Eastern flatbread. It is SO good! I’m sure these would be delicious with some chopped tomato and red onion too. This dinner is usually filling enough on its own. But lemon scented rice or Greek salad would make delicious side dishes.

  4. This looks totally yummy! I LOVE my crockpot and am always looking for new recipes. I love the way chicken gets so tender after a day in the slow cooker. One of my favorite things to do is throw some chicken thighs in with a jar of salsa and cook it all day. I love lemon with chicken and look forward to trying this one!

  5. Leah, your #2 Crock Pot recipe mad my mouth water. Did you cook the chicken IN the zip lock bag? Did you add the chix broth into the bag also?
